Highberry Cabernet Sauvignon 2014

Scored 92 points in Decanter rating, with following description:
"Soft berry fruits, an elegant style of Cabernet Sauvignon, the oak is nicely integrated. Good juicy structure, this has flesh and unfurls beautifully in the glass. This is a very good Cabernet in a European style, elegant rather than broad shouldered."

Werner Enelbrecht comments:
The grapes are destemmed and the whole berries are fermented naturally in Stainless Steel tanks. The berries spend about 30 days on the skins before being lightly pressed to separate the juice from the skins. Malolactic fermentation is completed in barrel. We use only 20% new barrels, while the rest being 2nd to 5th fill to preserve freshness and the natural flavours of the grapes. Highberry Cabernet Sauvignon is aged for 13 months in French Oak before racking and bottling. The wine is then aged for 10 months in bottle before release. The flavour profile consists of blackcurrants, spice and ripe plums. The wine has great concentration and the soft juicy pallet is complemented by fine tannins.

Unfortunately this vintage is just about sold out, but the good news is that we've recently bottled the 2015 vintage which shows beautifully.

Highberry Sauvignon Blanc 2015

Scored 90 points in Decanter rating with following description: "This is a crisp, fresh, citrus, grassy expression rather than gooseberry, so if we're going to stereotype: thin Loire, not Marlborough. Fruity, yet lean and nicely defined, from biodynamic grapes grown in Helderberg, near Stellenbosch."

This wine also earned the prestigious Sommeliers Selection Award in the Fresh & Crunchy category.

Werner comments:
A portion of the wine was fermented naturally in old 500 liter barrels which add lots of texture and complexity. The rest (70%) was fermented in Stainless steel tanks. It was left on the lees for 7 months after the completion of fermentation.

Our philosophy is to respect the site and allow the natural character and flavours derived from the vineyard to express itself in the wine. The wine has lots of texture, but the fresh acidity keeps the broad, full pallet in balance. Aromas consist of gooseberry, passionfruit as well as Granny Smith apples.

Sales of this vintage have been excellent, and we should be sold out early in 2017. Our 2016 vintage is in the process of being bottled.
